*NEW* - Yams and Winter Squash
We received a negative surprise when we learned
that eggplant did not make the cut as a highly nutritive vegetable. But
then we got a positive surprise with yams and winter squashes, about
which we knew very little previously.
Garnet yams, butternut squash, and acorn squash
have become staples in our household.
Red Peppers ****
Small amounts of cooked sweet
red peppers have been a usual addition through the years in appetizers,
salads, sandwiches, side dishes, omelets, and more . . . Thus it is easy to bring
small, but frequent, amounts of this healthy vegetable into daily
cooking.
Cabbage**** Simple, Cabbage Lasagna,
Cole Slaw, Knabrus, more . . .
Cabbage is a great friend of
the home cook. It will keep a couple of weeks in the refrigerator, so
some can always be at hand, and cooks in just 15 minutes.
Cauliflower****
Fresh cauliflower, when available, is a
great joy. Only shopping and storage considerations prevent its use as a
staple. Simple, Sautéed in Garlic, Sicilian
New Mashed Potatoes****
What's wrong with mashed potatoes? I thought we
were always taught that the potato is a nearly perfect food. This is
confirmed recently by . . . There are four
reasons why potatoes get the nod, while old-fashioned mashed potatoes do
not. All of these are correctible.
Thickened Yogurt Cream****
Thickened yogurt cream can be a tasty addition
for many vegetable dishes. Substitution for sour cream is only a start.
We use it where it genuinely enhances the taste of the dish.
