Slightly Cooked Vegetables
WITH VARIOUS DIPS

These are often served raw (al crudo), but most people prefer them slightly cooked. These are finger food, requiring neither knife nor fork. 

Steam or pan-steam cauliflower, broccoli, carrots just past the point of rawness. Steam or boil green beans. Include cherry tomatoes, uncooked.

Dip in:

Emergency Dipping Sauce (catsup, soy, Tiger sauce)

Or, Dill-Yogurt Dressing

Or, yogurt infused with capers, garlic, or roasted cumin

Or, Whipped Eggplant.
