Calamari Salad with White Beans
ITALIAN

This is a happy conjunction of flavors. Each ingredient - calamari, white beans, celery, sweet onion - is essential, and it seems that nothing else could be added without upsetting the balance.

Serves 4 as appetizer or small plate

Frozen calamari pieces, 1/2 pound, 3 cups, thawed
Sauté pan with cover

Film pan with water and bring to boil. Add calamari pieces. Cook covered 1 or 2 minutes just until calamari becomes opaque, no longer transparent. Calamari pieces will cook down to half their volume.

Remove calamari to a plate and reserve pan liquid.

Cooked white beans, 3/4 cup, drained
Celery, sliced on the bias, 3/4 cup
Sweet red onion, sliced, 1/4 cup
Bowl

Olive oil, extra-virgin, 1/4 cup, or to taste
Lemon juice, 1-1/2 tablespoons, or to taste
Salt and pepper

Place beans, celery, and onion in the bowl. Add cooked calamari.

Stir in olive oil. Season with salt and pepper to taste.

Just before serving, stir in lemon juice.

May be chilled before serving.

Variations

If sweet onions are not available, steep yellow onion slices an hour in ice water in the refrigerator.
