Chilled Pork Salad

This is a simple, refreshing, and tasty use of chilled pork, also known as leftover pork.

Chilled pork
Celery
Baby shrimp, cooked (optional)
Lettuce
Olive oil
White wine vinegar
Salt
Pepper
Salad bowl

Cut all fat from the pork. Dice the pork and celery. Place them in the bowl with the optional cooked shrimp. Cut the lettuce in ribbons (chiffonade) and place on top.

Make a vinaigrette of olive oil and white wine vinegar, salting to taste. Toss the salad in the vinaigrette. Grind pepper on top and serve.
