Crazy Broth
ITALIAN

This is what you use to improvise a chicken stock on short notice, or want a near-instant soup.

It is called "crazy" in Italy, Carol Field advises in In Nonna’s Kitchen, because the broth is so easy and quick to make. In the world of Italian grandmothers, 20 minutes is no time at all, an insanely short time to make a fully flavored broth.

Makes 4 cups

Celery, 3 ribs, with leaves
Bouillon cubes, chicken or meat, 4
Water, 4 cups
Saucepan, no cover

Place celery, bouillon, and water in a saucepan and simmer uncovered 20 minutes.

Remove celery, or chop fine in a food processor to include with the broth.

Variation

Add a carrot and small onion, both cut in pieces.

Carol Field says add fine ribbons of homemade pasta for a "fantastic" soup.
