Tomatoes

SUMMER TOMATOES

Chilled Tomato Slices

Fresh ripe tomatoes
Fresh basil, or dried
Olive oil
Salt

For better flavor, peel the tomatoes. (Cover the bottom of a pan with water. Cover and bring to simmer. Simmer tomatoes until skin is loosened, about 45 seconds to 2 minutes, depending on tomato.)

Remove seeds if desired. Slice the tomatoes thickly and place on a plate. Season with salt if desired. Chop basil. Spread basil on tomatoes, then drizzle on a little olive oil.

These may be used immediately, but are improved if left to stand in the refrigerator 2 hours or more.
