Leftover Zucchini Pasta
Per person
Short pasta
Leftover zucchini
Olive oil
Oregano, dried, or thyme
Parmesan cheese, grated
Place olive oil in a serving bowl and stir in oregano.
Boil pasta. Cut zucchini into bite-sized pieces. Add these to the pasta
for the last minute of cooking, to heat through.
Drain pasta-zucchini mixture. Toss in serving bowl with oil and oregano.
Serve with Parmesan cheese.
Variation
Rub cold zucchini pieces with crushed garlic. Reheat in toaster oven.
Add zucchini to the cooked pasta and toss as above.
