Leftovers can be an opportunity, not just a
problem. A lamb and beet salad can be, in its own way, as interesting as
the roast lamb was the night before.
Below are a few suggestions of our own, just to
get the section started. Feel free to share your solutions, developed
over the years.

Chicken
Paella. See Emergency Paella.
Chilled Chicken Salad with Celery and Lettuce.

Salmon
Chilled Salmon Salad. See recipe (variation).
Lamb
Make a lamb and beet salad. Slice lamb and
cooked beets in quarter-inch slices. Cut or tear lettuce into bite-sized
pieces. Toss all in a vinaigrette. Serve chilled or at room
temperature.
Beef
Slice steak, pot roast, or any cooked beef into
quarter inch slices. Marinate in red wine vinegar 0 to 30 minutes.
Reheat beef gently in microwave. Good with mashed potatoes or potato
salad.

LEFTOVER STRATEGY
The Day After the Party
The day after the party, you will be faced with a refrigerator full
of little bits of things. Here is a procedure: take all the leftovers
out and divide them as candidates for
pasta salad, or
soup
Chunky sorts of things that look intact may be used in the pasta
salad. These would include cooked green beans, cooked pork, and the
like.
All the wimpy stuff goes into soup; cooked tomatoes, cooked spinach,
spaghetti, and so on. If the soup doesn’t look pretty, you can always
puree everything in the food processor, then top with thick yogurt cream
sprinkled with paprika.
Lentil salad, and beet rice salad, are alternatives to pasta salad as
they can include a wide variety of leftovers.
